Red Cabbage, Roast Potatoes and Pigs in Blankets Hash


  1. Warm the oil in a pan and add in the cooked red cabbage, thyme, cooked potatoes and pigs in blankets, crushing some of the potatoes with the back of a spoon. Season and cook for 5-6 minutes.
  2. Once the mixture is piping hot, serve with a fried egg and a little Dijon mustard if liked.
  3. As a veggie alternative use nut roast in place of the pigs in blankets, and as a vegan alternative remove the eggs and substitute the butter.

  • 2 tbsp olive oil

  • 15g unsalted butter

  • 300g leftover cooked red cabbage

  • 1 tbsp thyme leaves

  • 400g leftover roast potatoes, roughly chopped

  • 300g leftover pigs in blankets

  • 4 fried eggs, to serve
