Pancetta Wrapped Asparagus


  1. Warm some oil in a pan
  2. Trim asparagus approximately 1 inch from the bottom. Put into a large bowl and drizzle with olive oil. Season with salt and pepper and toss.
  3. Wrap the pancetta tightly around each asparagus stalk. Put the wrapped asparagus into the pan and cook, turning frequently until slightly charred (this should take 2 to 3 minutes).
  4. Transfer to a serving plate and enjoy.

  • 1 large bunch asparagus

  • 2 tablespoons extra-virgin olive oil

  • 1 teaspoon salt

  • 1 teaspoon coarse ground black pepper and sea salt

  • 1 pack sliced pancetta
