King Prawn Pakoras


Wash the king prawns and blot dry on a piece of kitchen roll. 

Sprinkle with salt.

Combine the batter ingredients in a bowl.(gram flour, mustard seeds, yoghurt, water , zest, chilli, spring onions and salt.) 

Dip the prawns into the batter and shake off excess, although you want a good coating. 

Heat the oil in a pan or deep fryer (160 degrees c) and cook gently for about five minutes, by this time the pakoras will be golden and the prawns cooked through on the inside.

Serve with lemon wedges and a raita. 

These are also brilliant with sweet chilli sauce, (supermarket bottled will do.)

  • 400g raw king prawns

  • 140g gram flour

  • 1tsp black mustard seeds

  • 110ml natural yoghurt

  • 75ml water

  • 1 green chilli (split deseeded and chopped fine)

  • 3 finely chopped spring onions

  • Zest of half a lime

  • 1tsp salt
