Chuka-fu Shredded Cabbage

Method

Make this shredded cabbage as a typical Japanese side dish. It offers a freshness to cut through the richness of tonkatsu or other fried Japanese dishes.

STEP 1

Whisk the dressing ingredients together and toss into the shredded cabbage. Keep in the fridge until ready to serve alongside tonkatsu or other Japanese dishes.

The cabbage will go soggy if left dressed in the fridge for longer than an hour so, if you need to prepare ahead, simply make up the dressing and add it just before serving.

  • ½ green cabbage or pointed cabbage, shredded as finely as you can

  • For the dressing:

  • 1 tbsp white miso

  • 1 tbsp soy

  • 1 tbsp mirin

  • 1 large lime , juiced

  • 1 tsp sesame oil

  • 2 tbsp vegetable oil
