Brian Turner's Turkey Holstein



1. Flatten and trim the turkey

2. Mix the flour, paprika, mustard powder and salt and pepper

3. Beat two eggs

4. Then pass the turkey escalope through the flour mixture, eggs and breadcrumbs shaking off the excess at each stage

5. Fry presentation side down first to golden brown then turn over and fry other side

6. Take out and drain

7. Meanwhile in a small pan fry individual eggs

8. Put escalope on plate, with egg in the middle and lay anchovies around

9. Throw out excess fat from frying pan

10. Add vinegar and reduce by half

11. Shake in butter, strain into a clean pan

12. Add capers and parsley

13. Pour over eggs and serve

  • 4tbsp flour

  • 1tsp paprika

  • 1tsp English mustard

  • 6 hens eggs

  • 250gr white breadcrumbs

  • Salt & pepper

  • 2tbsp olive oil

  • 6oz unsalted butter

  • 16 tinned anchovy fillets

  • 2tbsp sherry vinegar

  • 2tbsp midget capers

  • 1tbsp chopped parsley
