Gusto's Warm Asparagus with a Creamed Truffle Dressing with Rocket & Grana Padano Cheese

Method

Method

1. To make the chive oil - take the chives and blend them together with the olive oil until bright green and pour through a fine sieve

2. To make the truffle dressing - mix the mayonnnaise with the truffle oil and wet down with the water till the consistency resembles a creamy dressing

3. Take the asparagus spears and blanch in boiling salted water for 1 ½ minutes

4. Remove from the water and season with salt and pepper

5. Place on plate laying them on top of each other to give height

6. Drizzle the truffle dressing around and over the asparagus, then lightly drizzle with chive oil

7. Garnish with rocket and using a peeler, shave 3-4 parmesan shavings on top on the spears

  • For the asparagus:

  • 3 asparagus spears trimmed

  • A pinch of rocket

  • Small block of Parmesan

  • Salt and pepper to season

  • For the chive oil:

  • Small packet of chives

  • 100ml of extra virgin olive oil

  • Truffle dressing:

  • 2 tsp mayonnaise

  • 1 tsp of water

  • 1 tsp truffle oil
