Pear and Walnut Salad
Serves 4
Ingredients
4oz baby rocket leaves
2 pears
3oz walnut pieces
2tbsp walnut oil
2tbsp ground nut oil
Juice of ½ lemon
Salt & pepper
Optional:
2oz Yorkshire blue cheese (Roquefort)
Instructions
Pick rocket leaves and put into a bowl. Chop the walnut pieces and mix with oils and lemon juice. Cut the pear in half lengthwise and remove the stem and pips. Cut into thin slices and add to the dressing and nuts. Season with salt and pepper. When ready to serve throw in the leaves. Toss carefully and put into individual service plates. If cheese is needed just crumble over.
